Black Eyed Pea Gumbo w/ Rice
1 c. dried black eyed peas
4 c. water
1-16oz frozen gumbo veggies
1-10oz can diced tomatoes
1/2 tsp. chili powder
1/2 tsp. garlic powder
1/4 tsp. crushed red pepper
1 tsp. sea salt
Hot cooked rice
Rinse dried peas well. Bring water to a boil; then add peas. Reduce heat and simmer for 45 minutes. Add remaining ingredients to pot and cook for approximately 30 minutes until peas are tender. Serve over hot rice.
